Kai Shun Premier Tim Mälzer TDM-1785 “The Legend”
Created to celebrate 15 years of collaboration between KAI and chef Tim Mälzer, the Tantō TDM-1785 is an anniversary edition limited to 6,666 individually numbered pieces worldwide. Each number is engraved on the bolster.
Its Tantō profile, inspired by the traditional Japanese short blade, combines a relatively straight spine and cutting edge. KAI recommends this shape for tasks such as cutting large vegetables, trimming meat and filleting fish.
Shun Premier blade
- Blade length: 25.5 cm
- Steel: VG-MAX core surrounded by 32 Damascus layers on each side
- Hardness: 61 (±1) HRC
- Finish: Tsuchime hammering and exclusive “15 The Legend” logo
- Edge: double-sided
The characteristic Tsuchime finish of the Shun Premier series contributes to the blade’s appearance and helps food release during cutting.

- Handle: medium-brown pakkawood with an ultra-matt finish

The pakkawood is treated with selected resins to improve durability and moisture resistance while maintaining a comfortable grip.
Award-winning limited edition
The TDM-1785 received the German Design Award 2025. It is handmade in Japan and belongs to the premium Shun Premier Tim Mälzer series.
