KAI Shun Premier Tim Mälzer TDM-1706 — 20 cm Chef's Knife

The TDM-1706 is the 20 cm chef's knife in the Shun Premier Tim Mälzer series. Its blade combines a VG-MAX steel core with 32 layers of Damascus steel and has a hardness of 61 ±1 HRC.

Hammered blade

The hammered finish is not purely decorative: the small indentations in the surface help food release from the blade while cutting. The edge is sharpened on both sides.

Handle and balance

The symmetrical medium-brown Pakkawood handle is suitable for both right- and left-handed users. The full tang contributes to stability and balance. The end of the handle features the bull's-head motif associated with Tim Mälzer.
