The KAI Shun DM-0701W universal knife is the twin brother of the KAI Shun DM-0701 series multi-purpose knife.
It has the same external and internal values, with one exception.
The handle is made of glossy laminated Pakka wood.
Every KAI Shun knife is a work of art
The Shun chef's knife series is one of the most complete damask knife series in the world and is very well received by elite chefs and ambitious home cooks. Shun Professional Chef's Knives are made from newly developed steel and 32 layers of Damascus stainless steel.
The inner layer is V-Gold-10 steel. This steel is extremely corrosion resistant, extremely hard (61 ± 1 HRC, 1.0% carbon, 1.5% cobalt) and makes the blade incomparably sharp.
