The knives in the Shoso range have an integral structure, meaning there is no welding between the blade and the handle.
Kaï's exclusive sharpening technique has three stages (including the one which gives the cutting edge the optimal cutting angle) which allows for better cutting of food.
The 1K6 steel used for the Shoso range has a carbon content of 0.8% and a Rockwell hardness of 58 +/-1.
The cutting edge is convex and the finish is satin.
