This Kai Tim Mälzer universal knife is designed by renowned chef Tim Mälzer. Kai uses its famous damast layered steel to design the knives in the Tim Mälzer range, with a VG-MAX steel core. This core is surrounded by 32 layers of corrosion-resistant damast steel. The hardness of these knives is extreme with 61 +/-1 HRC. They therefore retain their sharpness perfectly. The handle is made of brown walnut and is very comfortable for both left-handed and right-handed users.
