Product information "KAI Shun White DM-0706W"
The DM-0706W is the classic kitchen knife of the KAI Shun series. With a blade length of 20 cm and a 12.2 cm long wooden handle of light Pakka, it is a must for all cookers who want to equip their KAI Shun knives. The blade is forged type Damascus 32 folds and consists of an internal layer of steel V-Gold 10. For this reason, the DM-0706 (like all the knives in this series) has an extreme state-of-the-art retention and a hardness of about 61° Rockwell. The DM-0706 is specially adapted to the needs of lawmakers. For lefters, we offer the corresponding model DM-0706L.

Professional cook knives Shun are made from a newly developed steel and 32 layers of Damascus stainless steel.
The inner layer is V-Gold-10 steel. This steel is extremely corrosion-resistant, extremely hard (61 ± 1 HRC, 1.0% carbon, 1.5% cobalt) and makes the blade incomparablely sharp.
