The classic Japanese blade shape of Santoku offers an ideal application to prepare vegetables, fruits and herbs as well as to cut fish or meat. Length of blade: 16cm, Thickness of blade: 2,3mm, Total length: 28cm, Weight (without case): 175-195g.
Inspired by the needs of a star chef, KAI, in collaboration with MICHEL BRAS de Laguiole, France, created the series of chef knives, named MICHEL BRAS and composed of 10 chef knives. All chef knives have their own character trait and combine technology and know-how.
LA LAME.
The blade consists of three layers. A hard steel made of stainless steel (about 61 HRC) forms the core, surrounded by softer and more flexible steel steel (also stainless). The forged blade of the two grades of steel offers better resistance and better retention of edges. In addition, and a unique feature of KAI kitchen knives, a titanium layer is also applied to further improve antioxidant properties. The semi-gloss varnish (produced by sanding) offers an extraordinarily elegant look. Each blade has a serial number indicating that each knife is unique. Then a hanger is placed on the blade. It is a plant with good taste that grows only in the mountains of Aubrac up to 700 m. Made in Japan: this is also visible on the blade with a corresponding engraving.
POWER.
The chestnut-shaped handle is made of black laminated wood. It makes him insensitive to water. The end of each sleeve has a specific number to the shape of the knife, so that the correct knife is easily recognizable from the knife block. On the ricasso (unpolished part at the beginning of the blade) is a bee, symbol of the Laguiole knives, applied.
CAS:
Each knife is delivered not only in a beautiful gift box, but also in a simple case of high quality hard maple wood. A magnet inside the knife sheath ensures a safe grip of the knife and provides sufficient protection at any time.
CARE:

For sharpening knives, we recommend a ceramic stalk and/or a sharpened stone with grain 1000/3000. Place the blade at an angle of 10-15 ° on the stem or on the stone and always pull it against the edge. If you have any problems during the sharpening, do not hesitate to contact our specialized staff on site. In our grinding workshop, we can sharpen these knives easily and expertly by our knives.
