Kai AP-0316 Stone for sharpening kai knives in the traditional Japanese way, and therefore, professional, we recommend a series of sharpening stones for sharpening.
Here you will find detailed instructions for sharpening your single or double sided sharpening knives with traditional Japanese sharpening stones.
Method of employment:
1º Before use, soak the sharpening stone for 10 to 15 minutes completely in water. Please always leave a film of water on the stone while sharpening.
2º For asymmetrical knives, first place the edge face on the sharpening stone. Please keep the cutting angle predetermined by the manufacturer. Sharpen as far as possible at an angle of 45° (to obtain the best possible surface) with light pressure on the cutting edge in the forward direction and reduce the pressure on the cutting edge in the direction of return. After sharpening the knife on one side, turn it over and repeat the sharpening operation in a ratio of approximately 1 to 10 relative to the beveled side.
3º For knives sharpened on both sides, carry out the sharpening as on asymmetrical knives, but with an angle of approximately 15°. The important thing is to sharpen both sides equally in order to obtain a symmetrically sharpened blade.
