Blades and handles

The blades are made from European-origin martensitic stainless steel, with a stated hardness of 55–57 HRC.

The handles are made from PEFC-certified hornbeam sourced from sustainably managed forests in the Jura and Vercors regions. They are stained and varnished for improved protection against moisture and dirt. The stated handle length is 9.8 cm.

The vegetable knife has a fine blade suited to peeling, garnishing and sculpting fruit and vegetables. Opinel specifies that it is not designed to cut large hard-skinned vegetables such as squash or celeriac.
