The kiritsuke Kai Seki Magoroku Kaname AE-5501 with a 15 centimeter blade is a magnificent Japanese kitchen knife. The kiritsuke is designed as a versatile knife for preparing Asian dishes. This is done by combining the blade of a nakiri (vegetable knife) and a sujihiki (fish knife). This combination ensures that you can cut many ingredients with just one knife. With a blade length of 15 centimeters, this kiritsuke is very suitable for carrying out almost all cutting jobs in the kitchen.

Kai Seki Magoroku Kaname Kiritsuke

Originally, the kiritsuke is a single-sided sharpened knife created from a combination of the usuba (vegetable knife) and yanagiba (fish knife). Because these knives each had a completely different function and because the blade is sharpened on one side, this is a knife that is anything but easy to use. This is why in many traditional Japanese restaurants the knife is only used by the chef. It symbolizes expertise and status.

Blade Kai Seki Magoroku Kaname

Kaname knives have a blade whose core is made of VG-XEOS steel with a hardness of approximately 62 HRC surrounded by two layers of stainless steel. VG-XEOS is a brand new innovative steel grade from Takefu Special Steel Co. It is an alloy that combines high corrosion resistance with high hardness and wear resistance.

Kai Seki Magoroku Kaname Handle

Ideas from professionals and end users were brought together for optimal handle design. This resulted in a black pakka wood handle, where careful craftsmanship ensures a smooth transition between handle and bolster. The octagonal, ergonomic shape of the handle provides excellent control when cutting, while allowing the knife to fit comfortably and securely in the hand.

Sharpening Kai Seki Magoroku Kaname kitchen knives

Do not sharpen these knives with a through-hole sharpener! Due to the very hard steel and sideways movement that can occur in a continuous drive grinder, there is a good chance that pieces of the edge will break off. We therefore recommend carefully sharpening these knives by hand on a whetstone, sharpening rod or with a sharpening system.
