Maintenance
knives Helle are designed to keep their cleanliness as a companion outside throughout. But it is always important to take care of your knife and her sheath.
The handle. Dry the handle with a soft cloth so wet and wax from time to time.
The sheath. The leather must be impregnated from time to time with a colourless agent of impregnation (grass or wax) to keep supple. Dry the sheath with care the ambient temperature if it becomes wet
The blade. Wipe the blade with a soft cloth so wet and treat with fat from time to time.
Cost
Use a diamond tool or wet stone for sharpening. Place the flat knives to the sharpening tool and work the entire blade. Work on one side until you can feel a slight bavure on the opposite side. Put side and repeat the procedure until you feel the blind on the first side. You have now established a edge.
Remove the bavures by rubbing the blade gently on the sharp surface on both sides, as if the cut of the very thin slices. Keep the bucket flat to the size-crayon and move on one side to the other until the strawberry is gone.
If the blade is very hot or damaged, use a meule and much fine water and sharpen until you have a rough edge. Use as much cooling fluid and never sharpen on a dry stone. A hot front earth loses its heat treatment and the ruins of the blade.
