The YANAGIBA knife is the traditional Japanese knife to crush.
It is used to finely crush fish and meat. Thanks to its long and thin blade, this knife is particularly suitable for cutting in very thin slices, especially for sushi and sashimis.
It is suitable for the threading of fish but also for the cutting of crust pasta.
This knife ensures a cutting of surgical precision, clean and smooth.
The length and shape of the edge allow an exceptionally long cut.
