A harder knife blade may perform better than a softer blade. Toughness is the ability to resist chipping, cracking or breaking. Using a very hard, non-tough blade, such as a glass blade, will be very easy to break. That's why it's so important to balance hardness and toughness and why we heat treat every blade.
