What sizes of knives can be sharpened?
You can sharpen knives with a blade width/height between 14 and 60 mm, and up to 3.5 mm thick.

How long does it take to sharpen a knife?
Assuming you always use the same angle setting for a given knife (recommended), this will take you no more than 2 minutes, including sharpening and honing (finishing) on both wheels. Thanks to the pliers, sharpening is greatly facilitated: there is no need to fix the knife on a device beforehand.

Do I need to have sharpening experience to
use the T-2 wheel?
No, this tool is designed in such a way that anyone can quickly learn how to use it.
What should be the angle of the cutting edge of the blade?
Generally, a thin edge cuts better, while a wider edge angle is stronger and lasts longer. For example, a knife used for meat should have a wider sharpening angle than a thinner knife intended for cutting vegetables or filleting. The properties of the steel are also decisive. A high quality blade generally stays sharp longer, and often has a lower sharpening angle than a poor quality blade.
What is the difference between shaping and sharpening?
With the Tormek wheel, you sharpen the entire cutting edge, unlike the whetstone which only sharpens the tip of the blade. It is possible to maintain the blade with a sharpening steel between sharpenings, but the angle of the blade will always increase with use, and eventually the entire ground surface will have to be sharpened. With the Tormek T-2, you always grind the entire blade with minimal steel removal.
Is there a risk of overheating or damaging the steel?
Very often, we do not realize when the steel overheats during sharpening, but the consequences on the cutting quality of the knife are quickly visible. Compared to conventional wheels, which often use high-speed abrasive belts that generate more heat, the Tormek T-2 sharpens with a slower diamond wheel that does not damage the steel.
Can I put the Tormek T-2 in my kitchen?
Its small size allows it to always remain at hand. However, be careful not to leave it too close to the fumes, as particles or fat could deposit on the grinding wheel.
Is protective equipment necessary?
No. The machine turns slowly, and has been designed so that everyone can use it in the kitchen in complete safety.
